Quadly Cooking: Sausage and Kale Soup

Friends + Soup + Netflix = A Great Evening In. This soup is extra comforting when served with some warm, crusty bread.

Sausage Kale Soup

Ingredients:

1 package kielbasa or Polish sausage (or smoked turkey sausage, if preferred)
1 teaspoon minced garlic
1 quart (32-ounce box) broth
6 cups kale
1 14-ounce can of diced tomatoes
1 14-ounce can cannellini beans (white beans)

Sauté sliced Polish sausage or kielbasa in olive oil for about 10 to 15 minutes. Add garlic five minutes in. Add one box of chicken broth, kale, tomatoes and cannellini beans. Let simmer until kale is cooked.

Tip:

  • Don’t let the amount of kale surprise you. Allow it to cook down. If necessary, add half the kale and allow it to cook, then add the rest if your pan is overflowing.
  • I love my 12″ T-Fal pan. I use it for almost everything. It’s super easy to clean, too.
