I love soup. Warm. Easy. Comforting.

Ingredients:
1 pound ground beef
1 cup canned sliced carrots, diced
3 cups diced potatoes
3 cups chicken broth
1 cup heavy cream
1 cup finely grated cheddar cheese
1 teaspoon salt
½ teaspoon pepper
1 teaspoon basil
1 teaspoon asafoetida
2 tablespoons dried chives/green onions
Directions:
Brown ground beef. Add potatoes, broth and spices and bring to boil. Then let it simmer for 10 to 12 minutes or until potatoes are cooked. Finally, mix in the carrots, cream and cheese and cook until cheese is melted and carrots are hot.
Tips and Tricks:
- Place diced potatoes in a plastic container and cover them in water to prevent discoloring. They will stay good several days.
- Fiskars Easy-Action Scissors are my go-to for opening packages. I have enough of a grip due to my tendon transfers to close these spring-loaded scissors.
- Ziplock Slider Bags. I use these for easy, airtight storage for chips, cheese, bread and more. (And they work great for traveling, too!)
- Substitute green onions or chives for onions and asafoetida for garlic to prevent stomach upset. I use Mother Earth Dried Chives
and Rani Asafoetida.
